Introduction and background information
There exist various internationally accepted standards that have been found to support the
overall operation of the different schools. Among the existing standards are the ELCC standards
(Machado, 2012). Having been comprised of numerous standards, it can be deduced that the
most important aspects as far as the operations and the affairs of a given school have been
addressed. In looking at the working of the ELCC standards as far as the school setting is
concerned, this paper is going to look at a given school setting where the various issues of
concern as far as the overall improvement of the associated processes is concerned will be
addressed. The nature and the overall outline of the way the process was carried out are to be
described while the last bit will look at the results of the undertaken project regarding the school
selected.
The school that has been selected is King Abdulla Academy. The school is in Herndon,
Virginia near the Dulles International Airport. The school has been known to take care and deal
with students of ages between 4 years to about 18 years. The school was opened in the year 2016
following the closure of the previous Islamic school by the name Islamic Saudi Academy. The
school is a private institution funded and supported fully by the government of Saudi Arabia
where the students who include both boys and girls learn up to the 12th grade. The school has
been based on a firm mission statement which has been found to facilitate and foster the growth
of not only the school itself but also on the affairs of the learners. The school is entitled to ensure
that the students grow academically while observing the respective Islamic culture, values, and
language which goes a long way in ensuring that the learners exhibit the highest level of
appreciating the other cultures as well as being responsible.

The school also has crafted a strategic vision that has been directed towards ensuring that
the students not only grow academically but also grow all around. The school has been found to
shape the vision statement to fit in the overall attainment of the respective levels of innovations
among the learners. Through the vision statement, the school is determined to produce high-level
thinkers and innovators who will become not only responsible people within the countries but
also to become significant people within the society that they find themselves within.
The primary objective of undertaking the mentioned project as far as the school is
concerned is to ensure that the most appropriate eating habits have been crafted which would go
a long way in guaranteeing the overall nutrition levels of the students. As per the current regime
and eating habits, the nutrition value that is being added to the students through the current
eating habits are low. Therefore, the need to come up with measures that could be used in the
improvement of the overall nutrition at the school is realized. The significance of the project is to
ensure that the eating habits that the school has already implemented have been improved which
would lead to better and healthy living among the students which in turn may help in reducing
the chances of contracting malnutrition infections among the students. Additionally, the need to
come up with the relevant nutrition education among the students would help in ensuring that the
students are aware of their nutritional needs (Cousineau, Goldstein & Franko, 2004).
In addressing the participants of the project, since the primary target of the project is the
students, the most appropriate audiences to involve in the project would be the students
themselves and the administration as far as the food-related staff members are concerned. The
project has been set to take place between September 2017 to November 2017 where the students
and the relevant participants are to be subjected to various forms of training and meetings to
gather and give as much information as possible with respect to nutrition within the school. To

be compliant with the set ELCC standards such as ELCC 2.3, the best practices that would help
in improving the overall manner that the students work and learn would be used. Since
workshops and sensitization campaigns may be interesting to attend by students, the use of
posters among other visual aids would help in the overall issuing of the respective information
pertaining to nutrition.
The project is set to help in the improvement of not only the nutrition aspect of the school
but also on the overall manner that the students and the respective involved parties perceive
positive change. Through the introduction of various strategies that would help improve the
affairs of the students as far as nutrition is concerned, the school culture is set to be improved in
a positive way by ensuring that a new strategy and perception towards the eating habits have
been incorporated within the daily school routines. This would be in line with the ELCC standard
on the promotion of a positive culture within the school (ELCC 2.1) (Queen, Peel & Shipman,
2013).
Process description
Considering the above-mentioned description of the overall underlying principles that
revolve around the project, it has been mentioned that the project duration had been set to be
approximately two months. The project was carried out from the end of September 2017 to the
end of November 2017. Since the project comprises of various steps and phases that require
different resources among other aspects, it could not have been possible to start the project and
finish it within a few minutes. The first steps as far of the project was to observe the eating and
nutrition levels and habits of the school. This first step was done from September 26 for a period
of one week. On October 3, I scheduled a meeting with cafeteria manager to discuss the current
situation. The next step after the necessary information was gathered on the subject matter was to

seek the approval of the principal of the school. This was done on October 10 with the
submission of the respective proposal on the issue. After the approval from the principal was
obtained on October 13, the next steps were to follow up on the various avenues of acquiring the
necessary information throw meetings with respect to the project from the respective
stakeholders such as the cafeterias manager, nurse, PE teachers, the IT department and students.
After the necessary information with respect to nutrition levels at the school had been
collected which was on October 21st, the following steps were to analyze the collected data and
present the data in a report form to serve as a means of analysis of the current situation at the
school as far as nutrition is concerned and as a means of recommendations to be implemented
within the school. In addressing the aspect of the overall analysis of the school in terms of
nutrition, it was found out that the students had different interests as far as nutrition is concerned.
The IT department played a huge role in assisting in the determination of whether the school had
put in place any measures as far as facilitating better eating habits is concerned. The nurse
analyzed the various measures and strategies that could be used to help the students eat healthily.
The cafeteria supervisors helped in outlining that since the students had the sole responsibility of
choosing their preferred dishes, the same aspect should be directed to them to facilitate the
improvement of their overall nutrition. the project will end at the end of November 2017 with the
respective recommendations being issued to the respective parties and the desired changes being
implemented with the approval of the principal. The following section is going to describe the
activities that were achieved from the overall project.

Outcome
It has been seen that the project undertaken has been inclined towards ensuring that the
students have changed their current ways of eating by improving healthy eating habits. As the
cafeteria manager explained, some students just may prefer eating French fries as opposed to
salads and fruits which are more nutritional than the French fries. The blame should not be on the
students. Rather, the parties to be blamed the most are the cafeteria manager, the nurses and the
administration at large (McCollum, Kais & Minter, 2005). Although a student has a choice of
either eating healthy or not, the staff should have taken the initiative of educating the students on
the best eating habits that could lead to a healthy living. Instead, the cafeterias among other food
joints have no such information on nutrition. the project ended with various recommendations
and strategies that could be used to ensure that the students who in this context are the larger
context were not only understood and responded to but also were influenced towards the
recommended changes.
In the attempt to ensure that the students were fully engaged in the project towards the
achievement of the set improvements, the various strategies as outlined were used. Each student
was required to learn about the foods that they would wish to eat in the reflection of the
improved diet aspect. Since it would be boring for such young scholars to come up with a
theoretical food analysis, the use of visually assisted learning activities was adopted. This visual
learning process included the obligation of the students to craft plastic food baskets tagging them
with the respective and desired nutritional ideas behind the selected foods.
The other strategy involved the use of IT in sensitizing the students on the importance of
eating healthy. One task that the IT department was given was to ensure that the various screens
across the school with respect to the cafeterias as well as any other appropriate place were used

to display the most desired and appropriate food selection that a student may take and the
associated health tips. Healthy eating is achieved by combining the best foods that are rich in
dissemination every nutrient required by the body. Taking a meal that is rich in fiber helps in the
reduction of the possibility of constipation and the levels of cholesterol in the blood. Consuming
vast amounts of water on the daily basis helps to keep the body organs such as kidneys
functioning properly. These are some of the tips that could be displayed alongside a given meal
that is comprised of the various foods that are rich in the respective nutrients.
For the pre-school students, the best strategy that was found to be effective was to ensure
that the students kept track of their respective meals such as breakfast and lunch. A student was
supposed to make a record of all the foods that one took during breakfast and/or lunch which was
then to be submitted to the teachers at the end of the week. The teacher would then recommend
the best foods to be taken by the student based on their previous week`s food selection. On the
affairs of the 1st to 4th graders, using the MyPlate food card in the various avenues was found to
be an effective strategy to be used on the students. The other strategy was to design the
respective meal posters in the respective cafeterias which would display various combinations of
different foods that a student would take leading to better and healthy eating. The other strategy
was to engage the students in a physical activity. The students were supposed to color the
respective starts in a badge with their food color that was associated with the different foods that
were offered within the school. After a week of recording the meal taken, the students would
then wear their filled in badges within the school and compare with the rest to finds out who took
the most nutritious meals for that week.
For the other students, the respective healthy and nutrition tips designed in a posters form
was the most appropriate strategy that was to be used (Ha & Caine-Bish, 2009). Engaging the

students in the overall physical activities such as voting for their desired meals as provided by
the school would help in collecting the most appropriate information with respect to the students’
needs. Additionally, using the respective posters on MyPlate would help in the overall
engagement of the students in selecting their respective meals that would be used to improve
their respective nutrition as well as eating habits within the school.
The recommended strategies could not be implemented in a day hence, the administration
among the other affected stakeholders was supposed to ensure that the strategies were
implemented continually until the desired culture was attained.
Conclusion
Summing up, this paper has looked at various issues of concern with respect to the King
Abdulla Academy`s eating and nutrition habits. The school at the beginning of the project has
been portrayed as a school that offers no educational support as far as nutrition to the students is
concerned. The project that has been undertaken has outlined the various strategies that could be
implemented to ensure that the students have received and engaged in healthy eating.
